Two natives of Lima, Peru—Carmen and Juan Cespedes—have gotten together with Anne Gingrass (formerly of Hawthorne Lane) to create the hottest new restaurant in Hayes Valley: Essencia, specializing in both classic and contemporary Peruvian cuisine. Think egg salad with herbs and olive purée (classic) for lunch and beef tenderloin with stir-fried peppers and quinoa (contemporary) for dinner.
